My take on a chocolate chip cookie

Don’t tell Scottie Cookies

Recipe for a small batch of crave satisfying cookies


Ingredients

2/3 cup & 1 tbsp of flour

1/8 tsp Salt

1/4 tsp Baking Soda

1/4 tsp Baking Powder

1/4 tsp Instant Espresso Powder (optional)

1/4 cup softened butter

1/4 cup packed brown sugar

3 tbsp sugar

1 large Egg Yoke

1 tbsp water

1/2 tsp Vanilla Extract

1/3 cup semi-sweet chocolate chips

* You may sub in different chips and add more to liking. I usually make a mixture of semi-sweet and milk chocolate chips , but in these ones I did salted Carmel and semi-sweet chocolate chips.

Bulk barn is great for getting cookie mix’ins.


Directions

  1. Preheat oven to 350F

  2. Line a baking sheet with parchment paper

  3. In a medium size bowl sift the flour, baking soda, baking powder, salt and espresso powder

  4. In a larger bowl, use a mixer to cream the butter and sugars together

  5. Once light and creamy, add in egg yoke, vanilla and water

  6. Next, gradually mix the dry mixture into the wet till well combined

  7. Stir in chocolate chips or whichever your mix in mixture is

  8. Drop on cookie sheet with about an inch or so around each cookie

  9. Bake 10 - 12 minutes - *times vary oven to oven, so take note how you adjust times for yours

I doubled the recipe to make 2 Dozen cookies. For the second batch I experimented by pushing the middle down on the spoon to spread them out more. I do not recommend this. let them keep their thicker shape.
